Mississippi Pot Roast
Mississippi Pot Roast is a slow-cooked dish made with a chuck roast, ranch dressing mix, au jus gravy mix, butter, and jarred pepperoncini peppers. The roast is coated in the dressing and gravy mixes and topped with butter and peppers. It's cooked on low heat for 8 hours in a slow cooker resulting in a tender, flavorful pot roast. It is traditionally served with mashed potatoes or grits for a true southern feast.
Ingredients
- 3 lb Chuck Roast (You can use another type of roast, but I have found that chuck roast works well.)
- 1 Packet Ranch Dressing Mix (Be sure and get the dressing mix, not the dip mix.)
- 1 Packet Au Jus Gravy Mix
- 1 Stick Butter (1/4 Cup if using a measuring cup)
- 5-10 Pepperoncini Peppers (Mild or Hot depending on taste. These peppers are not too spicy.)
- 1/4 Cup Pepperoncini Juice (Probably about 1/3 of the liquid in the jar if you don't want to measure.)

Folks, this is a mighty fine recipe for a simple, but delicious Mississippi Pot Roast. If you are looking for a simple recipe you can toss in the pot at the beginning of the day and have dinner by the time the family gets home from work or school then this is the recipe for you.
First things first, you’ll want to take your chuck roast and place it in a slow cooker. Now, take your ranch dressing mix and sprinkle it all over that roast, making sure it’s well coated. Next, take your au jus gravy mix and do the same thing, giving it a nice dusting all over.
Next, you’ll want to take a stick of butter and cut it into small pieces, placing them on top of the roast. Last but certainly not least, take your jar of pepperoncini peppers and pull out 5-10 of them and place them around your roast. Take about 1/4 cup of the juice that the peppers come in and pour that around the outside edges of the roast. You may be tempted to add some water at this point, but don’t. It isn’t necessary.
Now, just put the lid on, set your slow cooker to low, and let it do its magic for about 8 hours. Once that time has passed, you’ll have yourself a mouthwatering pot roast that will have your taste buds tingling. When its finished shred it up a bit with 2 forks and it is ready to go.
Serve it up with some mashed potatoes or perhaps some buttery grits, and you’ve got yourself a true southern feast. This is also great for making sandwiches.
